Trachanas is made from a mixture of crushed wheat and milk, soured with yoghurt, that has been formed into small pieces and dried. To prepare a comforting and tasty Cypriot soup, the dried rusks are soaked in water to become a fine porridge, which is then boiled with stock or water.
Trachanas is a sour soup that is traditionally eaten in the colder winter months. The addition of small cubes of Halloumi cheese or chicken pieces make this soup even heartier.
