Soil Composition: Crystal gypsum, limestone & clay
Vine Training: VSP trellis system, oriented east to west
Viticulture: Organic (certified (CY-BIO-005.196-0001310.2023.001), practicing since 2010)
Age of Vines: 10- 15 yo
Winemaking: Pre-fermentation maceration at low temperatures. Spontaneous fermentation only the juice in different concrete eggs. The wine stays in contact with fine lees for approximately 4 months. Total sulfites at bottling 40 to 60 ppm.
