Trahanas is one of the oldest foods of Cyprus: cracked wheat fermented with soured milk, shaped and dried in the summer sun, then simmered into a thick, tangy winter soup, traditionally with cubes of halloumi. It is the taste of a Cypriot grandmother's kitchen, and almost impossible to find abroad.
